Recipe

i never make mashed potatoes because by the time they taste good you have added 1 lb. of butter, salt, milk and who knows what else and i don't feel like they are good for you. i found this recipe that is much healthier and was really yummy.
Garlic Mashed red potatoes
8 red potatoes, quartered ( i just used the little 2 lb. bag they come in probably 12-14 potatoes)
3 cloves of garlic
2 Tbs. butter
1/2 C. milk, warmed
1/2 tsp. of salt
1/4 C. parmesan cheese

place potatoes and garlic in large saucepan, cover with water. bring to a boil. reduce heat and simmer for 20-25 min. or until fork tender. drain well. place back in pan. add butter, milk, and salt. Mash or i just used a handmixer until it's the texture you like. stir in parmesan cheese.
i didn't add the garlic to the water, i added a little minced garlic to the potatoes. i left the skins on which i love but you can peel them if you don't like the skins but it is more nutrients. no butter or gravy is needed!

You're ambitious! I just use the potato pearls from the cannery with jarred gravy. Very yummy, very starchy!

I'm addicted to mashed potatoes. I don't care how bad they are for me--I thnk comfort foods are supposed to be unhealthy. Bring on the butter. =)

These look so good! I love red bliss potatoes - they are my favorites over the traditional white. Can't wait to try them!
